Mushroom Roast (Koon Ularthiyathu)

Mushroom Roast, or Koon Ularthiyathu, is a semi-dry dish cooked with a rich blend of onions, tomatoes, and Kerala spices. It pairs beautifully with rice, chapati, or porotta.

Ingredients

  • Fresh Oyster Mushroom3 tbsp

    * Rehydrated

  • Onion2 medium

    * Sliced

  • Tomato1 medium

    * Chopped

  • Green Chilies3 pieces

    * Slit

  • Curry Leaves2 sprigs
  • Turmeric Powder1/4 tsp
  • Red Chili Powder1 tsp
  • Coriander Powder1 tsp
  • Coconut Oil3 tbsp
  • Saltto taste

Instructions

Keep the fresh oyster mushroom in warm water for 10 minutes and drain.

Heat coconut oil in a pan and add sliced onions. Sauté until golden brown.

Add curry leaves and green chilies. Sauté for 2 minutes.

Add chopped tomatoes and cook until soft.

Add turmeric powder, red chili powder, coriander powder, and salt. Mix well.

Add rehydrated mushrooms and cook on medium heat for 15-18 minutes, stirring occasionally.

Cook until the mixture is semi-dry and well roasted. Serve hot.

Serving Suggestion

Serve with chapati, porotta, or rice.
