Mushroom Stew (Koon Ishtu) – Kerala Style

Mushroom Stew, or Koon Ishtu, is a mild Kerala dish made with mushrooms simmered in coconut milk, onions, and spices. It's a traditional breakfast curry usually served with appam or idiyappam.

Ingredients

  • Fresh Oyster Mushroom2 tbsp

    * Rehydrated

  • Coconut Milk1 cup

    * Thick coconut milk

  • Onion1 medium

    * Sliced

  • Green Chilies2 pieces

    * Slit

  • Curry Leaves1 sprig
  • Turmeric Powder1/4 tsp
  • Coconut Oil2 tbsp
  • Saltto taste

Instructions

Keep the fresh oyster mushroom in warm water for 10 minutes.

Heat coconut oil in a pan and add sliced onions. Sauté until translucent.

Add curry leaves and green chilies. Sauté for a minute.

Add turmeric powder and salt. Mix well.

Add rehydrated mushrooms and cook for 5 minutes.

Add coconut milk and simmer on low heat for 8-10 minutes. Serve hot.

Serving Suggestion

Best enjoyed with appam, idiyappam, or bread.
