Mushroom Thoran (Dry Coconut Stir-fry)

Mushroom Thoran is a dry Kerala side dish prepared with mushrooms, grated coconut, and spices. This wholesome stir-fry is a great accompaniment to steamed rice.

Ingredients

  • Fresh Oyster Mushroom3 tbsp

    * Rehydrated

  • Grated Coconut1/2 cup

    * Fresh or frozen

  • Onion1 medium

    * Finely chopped

  • Green Chilies2 pieces

    * Slit

  • Curry Leaves1 sprig
  • Turmeric Powder1/4 tsp
  • Mustard Seeds1/2 tsp
  • Coconut Oil2 tbsp
  • Saltto taste

Instructions

Keep the fresh oyster mushroom in warm water for 10 minutes and drain.

Heat coconut oil in a pan and splutter mustard seeds.

Add curry leaves, green chilies, and chopped onions. Sauté until onions turn translucent.

Add turmeric powder and salt. Mix well.

Add rehydrated mushrooms and grated coconut. Stir-fry on medium heat for 8-10 minutes.

Cook until the mixture is dry and well combined. Serve hot.

Serving Suggestion

Best served with Kerala meals and steamed rice.
